Raw Vanilla Donuts with White Chocolate Coconut Frosting
2/3 cup cashews
1 cup shredded coconut
2/3 cup packed almond pulp
1/2 cup pitted packed dates, finely chopped
1/2 teaspoon vanilla bean powder
6 tablespoons melted coconut butter
1/4 cup cashew butter
1/4 cup maple syrup, agave, or coconut nectar
1/4 cup water
2 tablespoons melted cacao butter
1/2 teaspoon pure vanilla extract
Finely grind the cashews and coconut in a food processor. Add the almond pulp, chopped dates, and vanilla powder. Process into a smooth dough. Roll into 12 balls. Slightly press down on each one and then use your finger to make a hold through the centre of each one. You may have to pinch some of the dough back together as it will crack a bit when you create the hole.
Whisk all other ingredients together until smooth for the frosting. Let it sit to thicken slightly, but if the frosting starts thickening too much set the bowl over a pot of hot water to loosen it up. Spoon the frosting over each donut. Sprinkle coconut on top.
